RECIPE: Better Than Sex Cake

For the SuperBowl, we didn't just have chili. We had something Better Than Sex! That's right! I made Better Than Sex Cake! (Woodrow disputes the name of the cake, regardless of how much he loves the cake.) I had a simple recipe in my recipe box, but I did check the internet and found a similar recipe for "Whoopie Cake". It was similar to my recipe, but it included toasted coconut and cherries. So I came up with this version of Better Than Sex Cake.

Box of Yellow Cake mix, prepared as directed
20 oz can crushed pineapple
1 cup sugar
1 large box vanilla instant pudding, prepared as directed
1 tub of Cool Whip
Toasted coconut (optional)
Cherries, sliced in halves (optional)

Prepare cake as directed. While it is baking, mix pineapple and sugar together in saucepan and bring to boil. Cook for a few minutes. Remove from heat and let pineapple sauce cool slightly.

Prepare pudding as directed, and put it in the frig to cool.

After cake is done baking, remove it from the oven. Remove cake from pan, if desired. (I just leave it in the cake pan.)

Poke holes in the top of the cake (I use the the handle of a wooden spoon, but you could probably use something smaller like a skewer or serving fork).

Spread pineapple mixture over top of cake.

Spread pudding over the pineapple mixture.

Spread Cool Whip over pudding mixture. Put cake in the frig to cool a little.

While cake is in frig cooling, toast the coconut. Or do as I did, and toast it ahead of time.

Sprinkle with toasted coconut and dot cherry halves across the top of the cake.

We loved the crunchiness of the coconut combined with the creaminess of the whipped cream and pudding, and the sweetness of the pineapple-soaked cake. In the past, I have have added banana slices under the pudding. Mmmmmmmm!
