ARCHIVE: Cooking with Mangoes

Well, mangoes are in season, but what do you do with a mango? If you're me you think, "Hmmmm. Mango salsa and fish or chicken?" Then you start searching the internet for a recipe and you find this on www.allrecipes.com:

Tilapia with Mango Salsa

1/3 cp extra-virgin olive oil

1 tbs lemon juice

1 tbs minced fresh parsley

1 clove garlic, minced

1 tsp dried basil

1 tsp black pepper

1/2 tsp salt

2 tilapia fillets

Salsa:

1 large mango, diced

1/2 red pepper, diced

2 tbs minced red onion

1 tbs chopped fresh cilantro

1 jalapeno, seeded and minced

2 tbs lime juice

1 tbs lemon juice

Salt and Pepper to taste

(I also added a papaya to my salsa)

Whisk together the marinade (olive oil through basil, salt and pepper), and pour into ziploc bag. Add the tilapia fillets and marinate in frig for 1 hour.

Prepare the salsa. Season and store it in the frig until ready to serve.

Remove tilapia from marinade. Grill about 3-4 minutes on each side, until flaky. Serve topped with salsa.

It was delicious! Even my friend loved it, and he is not a fan of fish. Wouldn't you know that I forgot to get a picture of the completed dish? However I had leftovers packaged up for my lunch the next day, and this is what it looked like with the green beans.
