ARCHIVE: Possum Cake

Sometimes you've just gotta do things "just because". The other day I wasn't feeling hot. You know the feeling-- tired, achy, crampy. I just wanted to go home after work and curl up on the couch with a blanket and a book. There was only one thing standing in my way-- my chocolate craving. I wanted chocolate cake with some of the vanilla frosting I'd seen the other day on Pioneer Woman. However, given how "ugh" I was feeling, I decided to go with a standard old boxed chocolate cake and make the frosting from scratch.



I won't go through all of the steps for the frosting, because Pioneer Woman already did it far better than I could do on her Tasty Kitchen blog. But I whipped up that frosting and spread it on that cake.

And then you know what I did? I decorated the cake and covered it with candles that I'd bought at the store for my boyfriend. Just Because.

And then I served it up to my boyfriend, and he and I blew out the candles together. Just Because.

And then light shone down from the heavens and I think we heard an angel or two sing. This frosting is a-w-e-s-o-m-e! Light and buttery. I called this cake "Possum Cake", because it was "Awesome Possum"!

And even better, my boyfriend was tickled that I decorated a cake and put candles on it. He's only had a decorated cake perhaps once in his life. So he was touched that I would do this for him. Just Because.

I should note that the frosting isn't the same the next day (or even after a few hours in the frig). The butter that was whipped up and creamed in the frosting solidifies in the frig. So it loses it's light and airy quality, but retains all of the flavor! So don't let that stop you. Whip up some Possum Cake for your family today. Do it now! Just Because.
