RECIPE: Potato Soup

Woodrow hasn't felt well lately-- lots of sneezing and sniffling. So yesterday his Mom emailed him a recipe for some potato soup that has lots of onions and garlic for fighting colds. So Woodrow asked me to make it for him. It has a bit of a kick to it-- a little heat. Here's the recipe:

Potato Soup

Margo's "Feel Better" Potato Soup

Olive oil
2 onions, chopped
2 potatoes, chopped in small chunks
2 cloves garlic, minced
2 cans of chicken broth
1 tsp dried thyme or 1 tbs fresh thyme
1/8 ts cayenne pepper
2 cps soy or rice milk
Salt and pepper

Saute onion in hot olive oil until transparent. Add the potato and garlic, and cook about 2 minutes more.

Add chicken broth, thyme and cayenne. Bring to boil; reduce heat and simmer 15 minutes.

Use a potato masher to mash the lumps out of the soup. (Or do as I do and process half of the soup in a blender and mix it back in to the soup to make it a little smoother.)

Add the "milk", and salt and pepper to taste. Reheat again until soup is heated through.

Note: You can add a stalk of chopped celery, if you wish.
