2 T. olive oil
1 poblano chile, chopped
1 green pepper, chopped
1 red pepper, chopped
1/2 onion, sliced
2 portabella mushrooms, chopped
1 t. ground cumin
1/2 t. salt
- Heat the oil in skillet and add the chile, onions, peppers and mushrooms. Saute mixture about 5 minutes. Mix in cumin and salt.
- Serve in taco shells topped with cheese and cilantro.
Mmmmmmm...good! Just serve some Mexican Rice on the side, and you've got a fast and easy vegetarian meal for a busy weekday. This one is definitely a keeper!
